Goat milk is scarce in Algeria, and where it exists it usually moves through informal markets with no cold chain and no pasteurisation. A published study on the physico-chemical and microbiological quality of goat milk sold in the informal market in Laghouat — our own region — documents exactly that problem.

Two differences genuinely matter. First the fat globules, roughly a micron smaller in goat milk: they emulsify more finely, which is why goat milk does not cream the way cow's milk does and why people so often describe it as lighter.
Second, αs1-casein, which is barely present in goat milk. It is the protein that forms the densest curd in the stomach; less of it means a softer curd. That is the mechanism most often given for why many people digest goat milk more easily.
The rest — slightly more calcium, phosphorus and potassium, slightly less lactose — points the same way, but these are modest gaps. A glass of goat milk is not a supplement. It is good milk.
Goat milk contains lactose. It is not a lactose-free substitute, and it is not suitable for people with a cow's milk protein allergy without a doctor's advice — the proteins in the two milks are close and cross-reactions are common.
