Our story

From Laghouat's pastures to your table

Cabri was born from a simple conviction: Algeria deserves its own artisan goat dairy products. Based on the high plateaux of Laghouat, the dairy raises around 200 goats in a natural, respectful environment.

From feeding the animals to processing the milk, every step is controlled on site. Our carefully selected cultures develop authentic flavours true to our terroir. Milk is processed the same day it is milked — which is exactly what makes the difference in a fresh goat cheese.

The dairy was founded by Lakhdar Marhoun Rougab, who runs the herd, its genetic selection programme and the production workshop.

Know your milk

Goat milk or cow's milk?

The question we get asked most. Here are the facts, without the hype.

Goat milk and cow's milk are nutritionally close. The main differences: goat milk has smaller fat globules, slightly less lactose, far less αs1-casein and a little more calcium. Many people find it easier to digest — but goat milk is not lactose-free, and it is not a safe substitute if you are allergic to cow's milk protein without medical advice.

Worth knowing

Goat milk contains lactose. It is not a lactose-free substitute, and it is not suitable for people with a cow's milk protein allergy without a doctor's advice.

Neither better nor worse — different. Goat milk has smaller fat globules, slightly less lactose (≈ 4.4 g vs ≈ 4.8 g per 100 ml), far less αs1-casein and a little more calcium. Many people find it lighter and easier to digest. It is not, however, lactose-free, and it is not suitable for people with a cow's milk protein allergy without medical advice.

Goat milk is a good source of calcium, protein, phosphorus and vitamin A. Its smaller fat globules and low αs1-casein content often make it easier to digest than cow's milk. Like any dairy product it belongs in a balanced diet — it is not a medicine.

Yes. All our milk is pasteurised in our workshop in Laghouat before being bottled or made into yogurt and cheese. Milk is processed the same day it is milked.

Keep the fresh goat cheese log between 0 and 4 °C, in its original wrapping or an airtight box, and eat it within 7 to 10 days of opening. Take it out of the fridge 15 minutes before serving — the aromas come through far better at room temperature.
