Until now, finding real goat cheese in Algeria was a matter of luck: a handful of producers in Kabylia or Tipaza, informal sales, no consistency. Cabri exists to change that — one herd, one workshop, and a regular supply into Algiers.

Notify meThe Cabri log is a lactic-set cheese: the milk is inoculated with selected cultures and left to set slowly, at low temperature, for close to twenty-four hours. That is the opposite of a pressed cheese, where rennet does the work in an hour.
This long set is what gives fresh chèvre its melting texture and its clean, gentle tang — never aggressive. It also makes the cheese fragile: it does not travel like a gouda, which is precisely why it barely existed in Algerian distribution until a producer took charge of the cold chain themselves.
The milk is pasteurised at the Laghouat workshop, then made into cheese the same day it is drawn. No milk is bought in, nothing is blended, nothing is added.

Fresh chèvre stands on its own, but it works hard too.
A thick slice on bread straight from the oven, olive oil, thyme. Nothing shows off a same-day fresh cheese better.
Two rounds under the grill for three minutes, set on salad with walnuts and honey. The log holds its shape under heat.
Crushed with a fork, olive oil, pepper and herbs — an aperitif spread in thirty seconds.
Out of the fridge fifteen minutes before serving. The aromas only really open at room temperature.
